Mest fordi det er så lett å tilberede når man har dårlig tid og skal på jobb (kremt). Tidligere har jeg brukt sil og kaffefilter i en herlig blanding, men har nå endelig innsett at det er mye lettere med presskanne. Man ender opp med et utrolig rundt og lettdrikkelig kaffeekstrakt. Bland med melk for iskaffe, eller med varmt vann for kjapp varm kaffe (50/50).</p>

<div><strong>Thailandsk kyllingsuppe med lime og kokosmelk (nok til to)<br />
</strong></div>
</p>
<ul>
<li>1 middels løk, raspet</li>
<li>1 fedd hvitløk, raspet</li>
<li>1 stilk sitrongress i skiver</li>
<li>2 ts rød curry paste (thai)</li>
<li>Seks 5mm tykke skiver med ingefær eller galangal</li>
<li>3 kaffir lime leaves</li>
<li>1 liter kyllingbuljong (kraft hvis du har)</li>
<li>3 kyllingfileter skjært i tynne strimler</li>
<li>0,5 liter ymse sopp i skiver</li>
<li>(10 &#8211; 15 tørkede shiitake, bløtlagt i varmt vann i 10 min)</li>
<li>1 boks med kokosmelk</li>
<li>En rød paprika i biter</li>
<li>3 vårløk i tynne skiver</li>
<li>Saften fra 2 lime</li>
<li>2 ss Fish Sauce</li>
<li>Hakket frisk koriander til pynt</li>
</ul>

<div>1. Stek løk og hvitløk til fin</div>
<div>2. Rør inn sitrongress, curry paste, galangal/ingefær og lime leaves. Fortsett å røre i 3-4 min</div>
<div>3. Ha i kyllingbuljongen, kok opp, skru ned til middels varme og la det hele koke i 15 min</div>
<div>4. Ha i soppen og skru av varmen. La det stå og trekke i 30min &#8211; 1 time</div>
<div>5. Varm opp igjen suppen. Ha i kokosmelk, kylling, vårløk og paprika. Kok til kyllingen er ferdig.</div>
<div>6. Ha i fish sauce og limejuice.</div>
<div>7. Pynt med koriander og server!</div>

<div>TIPS</div>
<div>- Mye av de &#8220;fancy&#8221; ingrediensene finnes på glass (sitrongress, galangal) eller som tørket (lime leaves) og funker helt fint til bruk i denne suppen.</div>
<div>- Hvis du har, så bruk tørket sopp. Den suger til seg noe helt ekstremt med smak og blir utrolig saftig</div></p>

<p style="text-align:left;"><strong>Den beste blomkålsuppen (nok til to)</strong></p>
<ul>
<li>1 løk, hakket</li>
<li>1 fedd hvitløk, hakket</li>
<li>En klatt med smør</li>
<li>1 blomkål i biter</li>
<li>1 l buljong</li>
<li>1 dl fløte</li>
<li>En halv pakke bacon i terninger</li>
<li>En halv rød chili i skiver</li>
<li>1/2 dl revet cheddar (eller den osten du har)</li>
<li>Pepper</li>
</ul>
<div>1. Stek løk og hvitløk fin</div>
<div>2. Rør inn blomkål og hell over buljongen</div>
<div>3. Kok til blomkålen er mør</div>
<div>4. Mens det koker kan du steke baconet. Når det er nesten sprøtt har du i chiliskivene og steker til det er ferdig.</div>
<div>5. Når blomkålen er mør stavmikser du hele greien og jevner med fløten.</div>
<div>6. Ha suppe i bolle og strø over ost og chilibacon. Avslutt med litt nykvernet pepper på toppen.</div>

<li>2-3 ss hakkede soltomater</li>
<li>1/2 liter buljong</li>
<li>Grønt krydder du måtte ha i skapet (oregano, basilikum, estragon, timian)</li>
<li>Fløte</li>
</ul>
<p>1. Surr løk og hvitløk i oljen, til den er fin<br />
2. Rør inn tomat og krydder<br />
3. Hell i buljong og la det hele koke i 10 til 15 min<br />
4. Stavmiks hele sulamitten<br />
5. Jevn med fløte og smak til med salt</p>
<p>Tips!</p>
<p>- Egg, makaroni og linser er fine til å gjøre suppen mer fyldig og mettende<br />
- Ha stekt kjøttdeig, 1 ts chilipulver, 1 ss kumin og en boks med bønner oppi suppen, så har du plutselig en enkel chili con carne</p>

<li>12 tørkede shiitake</li>
<li>3 kyllingfileter i  tynne strimler</li>
<li>4 ss soyasaus</li>
<li>2 ss risvineddik</li>
<li>1 eggehvite</li>
<li>Salt og pepper</li>
<li>150 g skoldede mandler</li>
<li>3 cm raspet ingefær</li>
<li>1 bunt vårløk</li>
<li>1 ss maizena</li>
<li>Olje som tåler høy varme</li>
</ul>
</div>
<div>1. Legg soppen i bløt i 2,5 dl varmt vann fra vannkokeren.<br />
2. Skjær kyllingen i strimler.<br />
3. Bland soyasaus, risvin, eggehvite, salt, pepper, raspet ingefær og 2 ss olje. Ha i kjøttet og la stå i 20 min.<br />
4. Skold mandler. Tørk dem godt med tanke på at de skal stekes i olje.<br />
5. Stek mandlene i wok til de er gyldne. Legg til siden.<br />
6. Del soppen i to og fjern stilken. Ta vare på vannet de lå i.<br />
7. Skjær vårløken i sneier (eller bruk saks)</div>
<div>8. Sil av kjøttet. Ta vare på resten av marinaden.<br />
9. Stek kjøttet litt etter litt i wok på full guffe. Legg kjøttet til siden etter hvert som det er stekt. Hver batch er ferdig på ca ett minutt.<br />
10. Stek løken i et par minutter, ha så i soppen<br />
11. Blande soppvannet med marinaden og maizena, hell oppi woken. Kok opp og ha kjøttet og mandler oppi. Ferdig!</div>

<p>Denne oppskriften har jeg originalt fra <a title="Frem Fra Skyggene" href="http://fremfraskyggene.blogspot.com/" target="_blank">Elisabeth</a> fra da jeg gikk på videregående! Den har som seg hør og bør blitt justert litt opp igjennom årene, slik at den nå er ca min egen. Dette er en saus som kan brukes til det meste og er super å ha klar i frysen til f.eks. moussaka, lasagne, pizzasnurrer, pasta, ostesmørbrød osv.</p>
<p><strong>Pastasaus</strong> (nok til en stor lasagne)</p>
<ul>
<li>1 pakke kjøttdeig av ønsket slag (4-500g)</li>
<li>1 løk, hakket</li>
<li>1-2 fedd hvitløk, hakket</li>
<li>1 boks hakkede tomater (bruk for all del ferske tomater om du har)</li>
<li>1 boks/glass tomatpuré</li>
<li>Like mye ketchup som tomatpuré</li>
<li>1-2 ss balsamico eller et glass vin (rød eller hvit)</li>
<li>1-2 paprika på glass, hakket (eller en ss paprikapulver)</li>
<li>6 soltørkede tomater i olje, hakket</li>
<li>1/2 liter buljong</li>
<li>Salt, pepper, oregano, basilikum. Etter smak.</li>
</ul>
<p>1. Surr løk og hvitløk i en stor gryte, til den er fin<br />
2. Ha i kjøtt og stek til brunt<br />
3. Ha i de resterende ingrediensene, utenom vin<br />
4. La koke i 2-3 timer på middels varme. Spe på med vann om det trengs og rør ca en gang i halvtimen<br />
5. Ha i krydder og evt. et glass vin når det er en halvtime igjen av koketiden</p>

<p>Været er ikke så veldig pent i Bergen for tiden, men med en stor kopp te, nybakte scones og en god bok i sofaen, så lyses hverdagen  litt opp. Nybakte scones er ekstremt gode med litt syltetøy på!</p>
<div><strong>Scones (10 stk) </strong></div>
<ul>
<li>8 dl hvetemel</li>
<li>4 ts bakepulver</li>
<li>1 ts salt</li>
<li>2 ts sukker</li>
<li>100 g smør (ikke margarin, vær så snill)</li>
<li>4 dl melk</li>
<li>(Rosiner)</li>
</ul>
<ol>
<li> Bland alt det tørre</li>
<li>Skjær smøret i terninger og knip det inn i melblandingen med hendene. Når smøret har &#8220;trukket&#8221; helt inn i melblandingen er du klar for neste steg.</li>
<li>Rør inn melken. Resultatet skal være en litt klumpete og flytende deig. Bland i rosiner om det er ønskelig.</li>
<li>Fordel massen i muffinsformer, eller bare som litt flytende klatter på brett med bakepapir. Jeg bruker et muffinsbrett.</li>
<li>Stekes midt i ovnen på 250 grader i 10-12 min</li>
</ol>
<div><strong>Tips</strong></div>
<div>- Bytt ut litt av melken med appelsinjuice for å få et litt mer fruktig resultat. Litt appelsinskall gjør også susen!</div>
<div>- Bytt gjerne ut hvetemel med f.eks. sammalt spelt for en litt sunnere scone</div>
<div>- Kan helt fint fryses og spares til en regnværsdag</div>
